Gluten Free Tim Tams
If you have ever had the infamous Australian cookie, Tim Tams, you will be thrilled to know you can now have them whenever you want. This gluten free version is sure to satisfy your Tim Tam craving.

For the Biscuits
- 1 cup gluten free flour I prefer Bobs Red Mill
- 1/2 cup butter softened
- 1/2 cup sugar
- 1/4 cup cocoa powder
- 1 egg
- 1 pinch salt
For the Filling
- 1/2 cup butter softened
- 1 tbsp cocoa powder
- 1/2 tbsp vanilla paste
- 1 cup powdered sugar
For the Chocolate Coating
- 1 cup chocolate chips
- 1 tbsp coconut oil
For the Biscuits
Preheat oven to 350 degrees.
For the biscuits, in a mixing bowl add the butter and sugar and whip until fluffy. Add in the egg and mix well.
Slowly add the rest of the ingredients for the biscuits and mix until combined.
Place a piece of parchment paper down and add the biscuit mixture on top. Top with another piece of parchment paper and roll until the dough is 1/2 inch thick.
Put the dough into the freezer for 30 minutes. Once chilled, cut into bite sized rectangular biscuits and place on a cookie sheet.
Bake the biscuits for 8 minutes and then cool completely.
Combine the Biscuits and Filling
For the Chocolate Coating
Combine all elements
Spoon over the top of biscuits until coated.
Let the Tim Tams sit out or put in the refrigerator for about 1 hour or until the chocolate coating is set.
It is best to store these in the refrigerator if you don't finish them in one sitting!
