Vegan Apple Pie Bars

Not quite apple crisp or apple pie, but rather apple pie bars. With the added bonus of being gluten, dairy, nut free, and vegan, these bars will make everyone happy to enjoy.

Ingredients
  

For the Bars

  • 2 cups gluten free oat flour blend oats to make your own
  • 1/2 cup coconut flour
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil melted
  • 1/3 cup sunflower seeds ground in a blender
  • 1/2 tsp salt
  • 1 tsp vanilla extract

For the Apple Filling

  • 5-6 small apples peeled and diced into small cubes
  • 1.5 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/4 cup maple syrup
  • 1 tbsp coconut oil
  • 2 tbsp arrowroot starch or cornstarch
  • 2 tbsp water

Instructions
 

  • Preheat the oven to 350F.
  • Line 8x8 baking dish with parchment paper.
  • To make the base dough, in a bowl combine oat flour, coconut flour, sunflower seeds, coconut oil, maple syrup, salt, and vanilla. Mix until well combined.
  • Place half of the base dough in your lined baking dish. Save the other half for your topping.
  • For the apple filling, melt the coconut oil in a saucepan. Add in the apples, maple syrup, and cinnamon. Cook for 3-4 minutes.
  • While the apples are cooking, in a small bowl, combine the arrowroot starch and water. Mix well until there are no clumps. Then add the mixture to the apples and cook for 2 minutes.
  • Pour the apple mixture on top of the base. Then top with the rest of the oat mixture.
  • Bake for 20-25 minutes. Let cool before cutting and enjoying!
