Preheat the oven to 350 degrees. Line 9x5 loaf pan with parchment paper.
In a microwave safe bowl, add water and almond milk. Heat slowly until warm.
Add melted coconut oil, maple syrup, and vanilla to the warm water and milk mixture.
In a large mixing bowl, combine all the dry ingredients - oat flour, almond flour, salt, cinnamon, baking powder, baking soda, pecans, and raisins. Mix until combined.
Add the wet ingredients into the dry ingredients and mix until well combined.
Pour the dough into the loaf pan, and top with a few pecans and raisins.
Bake for 45-50 minutes or until a toothpick comes out clean. Let cool before slicing and serving.
