Coconut Pecan Granola

Granola is versatile and can be a great topping on many dishes or by yourself as a snack. Toasted coconut gives this granola an extra naturally sweet flavor. Customize how you prefer and try to not eat it all at once!

Ingredients
  

  • 1 cup pecans chopped
  • 3 cups rolled oats
  • 1/2 cup shredded coconut
  • 1/3 cup honey or maple syrup
  • 1/3 cup coconut sugar or brown sugar
  • 3 tbsp coconut oil melted
  • 1 tsp vanilla

Instructions
 

  • Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper.
  • In a mixing bowl combine the pecans, oats, coconut, and coconut sugar.
  • In a separate bowl, combine the melted coconut oil, honey, and vanilla. Then add the wet ingredients to the dry ingredients and mix well.
  • Pour the oat mixture out on the lined cookie sheet.
  • Bake for 10 minutes and use a spatula to mix up the granola.
  • Bake for another 5 minutes or until lightly golden in color. Do not mix. Let the granola sit and cool.
  • Once the granola is completely cooled, break it into clusters and enjoy.
