Pumpkin Spice Sweet Potato Oat Waffles

Waffles are a fun way to twist up your go to breakfast. To make them even better, these sweet potato waffles have all the comforting spices, are vegan, gluten free and have a lot of nutritional value. Not to mention, they are incredibly delicious.

Ingredients
  

  • 1 cup sweet potato baked and skin removed
  • 3/4 cup almond milk or favorite milk
  • 1/2 tbsp apple cider vinegar
  • 1 tsp vanilla
  • 1 tbsp almond butter or favorite nut butter
  • 2 cups rolled oats or oat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 1-2 tbsp maple syrup or honey optional
  • 1/4 cup chopped pecans or walnuts optional

Instructions
 

  • In a small bowl, combine the almond milk and apple cider vinegar. Mix well and set aside for 3-4 minutes.
  • In a high speed blender, add all of the ingredients besides the pecans if you are adding them in.
  • Blend the sweet potato, milk mixture, almond butter, vanilla, cinnamon, pumpkin pie spice, salt, baking soda, baking powder, and oats until smooth.
  • In a heated waffle iron, spoon ⅓ cup of the waffle batter and cook according to your waffle iron instructions.
  • Serve immediately. Top with banana or berries, extra almond butter, and more pecans. Or any of your favorite toppings. Serve hot!
