Beet Hummus
This hummus will bring the most beautiful and bright color to anything you put it on. With the natural sweetness of the beets, it is a dip that will be one you constantly have in your refrigerator. And you will never guess how you achieve the perfect creamy texture!
- 15 oz canned garbanzo beans rinsed, skins removed
- 2 small beets cooked, skin removed
- 2 tbsp lemon juice
- 2 tbsp tahini
- 1 tsp garlic powder
- 1 tsp salt
- 2 ice cubes
Rinse your chickpeas well and remove the outer skin. I like to add them to a bowl of water and use my hands to peel them off.
Add the chickpeas and the beets to a blender or food processor. Pulse a few times.
Add the rest of the ingredients into the blender and blend until the ice cubes are melted and the hummus has a thick and creamy texture.
Enjoy with pita or your favorite veggies. Or basically anything! Store in a covered container in the refrigerator.
