Honey Mustard Pistachio Salmon
A quick, healthy, and easy meal that is full of flavor and texture. Pair it with your favorite salad, roasted veggies and you have a meal in 20 minutes or less.

- 24-32 oz fresh wild caught salmon (cut into four pieces)
- 1/4 cup pistachios finely chopped
- 2 tbsp dijon mustard
- 1 tbsp olive oil
- 1/2 tbsp lemon juice
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1 tsp salt
Preheat the oven to 400F.
Line a cooking sheet with parchment paper or tin foil. Place the pieces of salmon on the cooking sheet.
In a small bowl, add the dijon mustard, lemon juice, olive oil, salt, pepper, and garlic powder. Stir well.
Spread ¼ of the mustard mix on each piece of salmon. Top with about 1 tbsp of chopped pistachios.
Bake for 8-10 minutes until the salmon is cooked to your liking.
Serve immediately with your favorite sides!
