Taco Salad

Taco Tuesday is one of those nostalgic meals and sometimes we just need a lighter version. This taco salad will leave you satisfied, feeling good, and happy that you have fulfilled your taco cravings!

Ingredients
  

For the Taco Meat

  • 3 lbs ground turkey
  • 1/2 onion diced
  • 1 tbsp chili powder
  • 1 tsp paprika
  • 2 tsp cumin
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp red pepper flakes
  • 1/4 cup water

For the Salad

  • 2 heads romaine lettuce rinsed and chopped
  • 2 avocados sliced
  • 1 tomato diced
  • 1 red or orange bell pepper chopped
  • 1/2 jalapeno minced
  • 1/4 cup cilantro diced
  • 1/2 red onion minced
  • 1 cup salsa
  • 12 oz cauliflower rice cooked
  • 15 oz canned black beans rinsed

Instructions
 

  • In a large cooking pan, add the ground turkey and onion. Stir often and cook on medium until the meat is cooked through. About 6 minutes.
  • Add in all of the spices and ΒΌ cup of water to the pan with the ground turkey. Mix well until everything is combined and cook for 1-2 minutes.
  • In a large mixing bowl, add the lettuce, tomato, bell pepper, jalapeno, black beans, cilantro, cauliflower rice, and onion. Mix well until everything is combined.
  • Top the salad with salsa and avocado. Mix well until everything is lightly dressed.
  • Serve and enjoy!
