Vegan Kale Pesto
Pesto is one of those sauces that is nice to always have on hand for a quick pasta dish or on top of your favorite protein. This version is cheese free, but you won’t even miss it.
- 2 cups kale
- 1/2 cup olive oil
- 1/2 cup walnuts
- 2 cloves garlic
- 2 tbsp lemon juice
- Pinch salt and pepper
- 1/4 cup nutritional yeast
In a food processor blender, add the kale, walnuts, garlic, lemon juice, salt, and pepper. Pulse until everything is chopped very small and coming together.
Add in the nutritional yeast.
Turn the blender on low and slowly add in the olive oil while the blender is on.
Continue to blend until you achieve a creamy texture.
Use the pesto right away or store in a sealed container in the refrigerator or freezer.
