Vegan Kale Pesto

Pesto is one of those sauces that is nice to always have on hand for a quick pasta dish or on top of your favorite protein. This version is cheese free, but you won’t even miss it.

Ingredients
  

  • 2 cups kale
  • 1/2 cup olive oil
  • 1/2 cup walnuts
  • 2 cloves garlic
  • 2 tbsp lemon juice
  • Pinch salt and pepper
  • 1/4 cup nutritional yeast

Instructions
 

  • In a food processor blender, add the kale, walnuts, garlic, lemon juice, salt, and pepper. Pulse until everything is chopped very small and coming together.
  • Add in the nutritional yeast.
  • Turn the blender on low and slowly add in the olive oil while the blender is on.
  • Continue to blend until you achieve a creamy texture.
  • Use the pesto right away or store in a sealed container in the refrigerator or freezer.
