Zucchini Banana Bread

Zucchini bread is a childhood favorite and my take is naturally sweetened with bananas. Hidden fruits and veggies and not lacking on the flavor front.

Ingredients
  

  • 3 bananas mashed
  • 1 cup zucchini shredded
  • 3 eggs
  • 1/2 cup ground flaxseeds
  • 2 cups almond flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup walnuts chopped

Instructions
 

  • Preheat oven to 350 degrees.
  • Line a loaf pan with parchment paper.
  • In a large mixing bowl, add the bananas, eggs, and zucchini. Make sure you squeeze out some of the liquid from the zucchini first. Mix everything until well combined.
  • Then add in the dry ingredients, and mix well. Stir in the walnuts until everything is combined.
  • Pour into the lined loaf pan and cook for 45-50 minutes.
