Coconut Pecan Granola

Granola is versatile and can be a great topping on many dishes or by yourself as a snack. Toasted coconut gives this granola an extra naturally sweet flavor. Customize how you prefer and try to not eat it all at once!
Ingredients
- 1 cup of pecans, chopped (almonds or walnuts work too)
- 3 cups rolled oats (use GF if preferred)
- ½ cup shredded coconut
- ⅓ cup honey (maple syrup works too)
- ⅓ cup coconut sugar (brown sugar works as well)
- 3 tbsp coconut oil, melted
- 1 tsp vanilla
Instructions
- Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper.
- In a mixing bowl combine the pecans, oats, coconut, and coconut sugar.
- In a separate bowl, combine the melted coconut oil, honey, and vanilla. Then add the wet ingredients to the dry ingredients and mix well.
- Pour the oat mixture out on the lined cookie sheet.
- Bake for 10 minutes and use a spatula to mix up the granola.
- Bake for another 5 minutes or until lightly golden in color. Do not mix. Let the granola sit and cool.
- Once the granola is completely cooled, break it into clusters and enjoy.
