Gluten Free Tim Tams

If you have ever had the infamous Australian cookie, Tim Tams, you will be thrilled to know you can now have them whenever you want. This gluten free version is sure to satisfy your Tim Tam craving.
Ingredients
- For the Biscuits:
- 1 cup gluten free flour (I used @bobsredmill)
- 1/2 cup butter, softened
- 1/2 cup sugar
- 1/4 cup cocoa powder
- 1 egg
- Pinch of salt
- For the Filling:
- 1/2 cup butter, softened
- 1 tbsp cocoa powder
- 1/2 tbsp vanilla paste
- 1 cup powdered sugar
- For the Chocolate Coating:
- 1 cup chocolate chips
- 1 tbsp coconut oil
Instructions
- For the biscuits, whip the butter and sugar together until fluffy. Add in the egg and mix well. Slowly add in the rest of the ingredients until combined. Roll the dough between two pieces of parchment paper. Put into the freezer for 30 minutes. Preheat the oven to 350 degrees. Bake for 8 minutes and then cool.
- In a mixing bowl whip all the filling ingredients together until light and fluffy. Put filling on one biscuit and top with another. Chill in the refrigerator for 1 hour.
- Melt the chocolate chips and coconut oil and mix well. Spoon over the top of the biscuits until coated. Let sit or put into the refrigerator for about an hour or until the chocolate coating is set.
