Hummingbird Cake Smoothie Bowl

Hummingbird cake is a lot like carrot cake but gets an extra boost of sweetness and texture from pineapple. This smoothie takes all the traditional ingredients and puts them into a cold breakfast version of the most incredible cake.



Ingredients

  • 1 cup coconut milk
  • 1 tbsp almond butter
  • 1 scoop vanilla collagen powder 
  • 1 tsp coconut butter
  • 1 tsp cinnamon
  • 1 cup frozen cauliflower rice
  • ½ cup frozen pineapple
  • ½ cup frozen carrots

Instructions

  1. Grab your blender or food processor.
  2. Add your coconut milk, almond butter, cinnamon, collagen, and coconut butter. Then add your frozen fruits and veggies.
  3. If you want a thinner smoothie, add additional coconut milk
  4. Blend. You will need to scrape down the sides a couple of times or use a tamper to get everything combined.
  5. Continue blending until you reach your desired consistency.
