Oatmeal Chocolate Chunk Cookies

Have you ever wondered how chocolate chips have all the melty chocolate goodness on the top of every cookie? Well you can now find out with these chocolate chunk cookies that happen to also be a healthier version of your favorite cookie.



Ingredients

  • 1/4 cup almond butter (or favorite nut butter)
  • 3 tbsp melted coconut oil
  • 1 egg
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp ground flax seed
  • 1 cup gluten free rolled oats
  • 1/4 tsp cinnamon
  • 1/4 cup almond flour
  • 1/2 tsp baking soda
  • 3/4 cup chocolate chips/chunks

Instructions

  1. Preheat the oven to 350F.
  2. In a large mixing bowl, whisk together egg, almond butter, maple syrup, melted coconut oil and vanilla extract.
  3. Fold in remaining ingredients, leaving 1/4 cup chocolate to the side.
  4. Using a cookie scoop, divide dough into 14-15 cookies on a parchment paper covered cookie sheet. Add remaining chocolate to the top of each cookie.
  5. Bake for 8-10 minutes.
