Chunky Monkey Freezer Fudge

For those times when you need something sweet or even a boost of energy, you can now look to your freezer for this nutrition filled sweet treat. And what goes better together than bananas, peanut butter, and chocolate?
Ingredients
- 2 ripe bananas, mashed
- ¾ cup peanut butter (or your favorite nut butter)
- ¼ coconut oil, melted
- ¼ chopped peanuts or nuts of your choice
- 1 cup chocolate chips (I love Lily’s or Enjoy Life to be vegan)
- 2 tbsp coconut oil
Instructions
- Line a 9x5 loaf pan with parchment paper.
- In a large bowl, mash the bananas until smooth. Stir in the peanut butter and melted coconut oil. Once well mixed, pour the batter into the loaf pan. Top the batter with the chopped peanuts. Place into the freezer and freeze until solid, about 30 minutes.
- In a microwave safe bowl add the chocolate chips and 2 tbsp of coconut oil.
- Microwave until melted and mix until combined.
- Once the fudge is frozen, pour the chocolate mix on top. Freeze until solid.
- Cut, serve, and devour 🙂
