Vegan Peanut Butter Chocolate Swirl Banana Bread

You will see a theme of chocolate, banana, and peanut butter combinations across Conscious Table and that’s because it is the most perfect trio. This swirled banana bread looks amazing, tastes even better, and is vegan and gluten free.
Ingredients
- 3 bananas, mashed
- 1 cup almond milk (or favorite plant based milk)
- ⅓ cup melted coconut oil
- ½ tsp cinnamon
- 1 tsp vanilla
- 3 tbsp ground flax seed
- ⅓ cup peanut butter
- ¼ cup cacao powder
- ½ cup oats
- 1 ½ cup oat flour (can use oats and blend to a flour consistency)
- 1 tsp baking powder
Instructions
- Preheat the oven to 350F.
- Line a 9x5 loaf pan with parchment paper.
- In a large bowl, mash the bananas and then add the almond milk, peanut bowl, and vanilla.
- Then add in the cinnamon, ground flaxseed, oats, oat flour, and baking powder.
- Once everything is combined, add in the melted coconut oil.
- Place half of the batter in a separate bowl and mix in the cacao powder.
- Pour the peanut butter batter into the loaf pan. Top with the chocolate mix and swirl the two together with a knife.
- Bake for 35-40 minutes. Cool before slicing.
