Taco Salad

Taco Tuesday is one of those nostalgic meals and sometimes we just need a lighter version. This taco salad will leave you satisfied, feeling good, and happy that you have fulfilled your taco cravings!
Ingredients
- For the taco meat:
- 3 lbs ground turkey
- ½ onion, diced
- 1 tbsp chili powder
- 1 tsp paprika
- 2 tsp cumin
- 1 tsp oregano
- 1 tsp salt
- ½ tsp pepper
- ¼ tsp red pepper flakes
- ¼ cup water
- For the salad:
- 2 heads romaine lettuce, cleaned and chopped
- 2 avocados, sliced
- 1 tomato, diced
- 1 red or orange bell pepper, chopped
- ½ jalapeno, minced
- ¼ cup cilantro, diced
- ½ red onion, minced
- 1 cup salsa
- 1 12 oz bag cauliflower rice, cooked
- 1 15 oz can black beans, rinsed
Instructions
- In a large cooking pan, add the ground turkey and onion. Stir often and cook on medium until the meat is cooked through. About 6 minutes.
- Add in all of the spices and ¼ cup of water to the pan with the ground turkey. Mix well until everything is combined and cook for 1-2 minutes.
- In a large mixing bowl, add the lettuce, tomato, bell pepper, jalapeno, black beans, cilantro, cauliflower rice, and onion. Mix well until everything is combined.
- Top the salad with salsa and avocado. Mix well until everything is lightly dressed.
- Serve and enjoy!
