Beet Hummus

This hummus will bring the most beautiful and bright color to anything you put it on. With the natural sweetness of the beets, it is a dip that will be one you constantly have in your refrigerator. And you will never guess how you achieve the perfect creamy texture!



Ingredients

  • 1 15oz can of chickpeas, rinsed and outer skins removed
  • 2 small beets, cooked and skin removed 
  • 2 tbsp lemon juice
  • 2 tbsp tahini
  • 1 tsp garlic powder
  • 1 tsp salt
  • 2 ice cubes

Instructions

  1. Rinse your chickpeas well and remove the outer skin. I like to add them to a bowl of water and use my hands to peel them off.
  2. Add the chickpeas and the beets to a blender or food processor. Pulse a few times.
  3. Add the rest of the ingredients into the blender and blend until the ice cubes are melted and the hummus has a thick and creamy texture.
  4. Enjoy with pita or your favorite veggies. Or basically anything! Store in a covered container in the refrigerator.
