Coconut Pecan Granola

Granola is versatile and can be a great topping on many dishes or by yourself as a snack. Toasted coconut gives this granola an extra naturally sweet flavor. Customize how you prefer and try to not eat it all at once!



Ingredients

  • 1 cup of pecans, chopped (almonds or walnuts work too)
  • 3 cups rolled oats (use GF if preferred)
  • ½ cup shredded coconut
  • ⅓ cup honey (maple syrup works too)
  • ⅓ cup coconut sugar (brown sugar works as well)
  • 3 tbsp coconut oil, melted
  • 1 tsp vanilla

Instructions

  1. Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper.
  2. In a mixing bowl combine the pecans, oats, coconut, and coconut sugar.
  3. In a separate bowl, combine the melted coconut oil, honey, and vanilla. Then add the wet ingredients to the dry ingredients and mix well.
  4. Pour the oat mixture out on the lined cookie sheet.
  5. Bake for 10 minutes and use a spatula to mix up the granola.
  6. Bake for another 5 minutes or until lightly golden in color. Do not mix. Let the granola sit and cool.
  7. Once the granola is completely cooled, break it into clusters and enjoy.
