Egg Roll in a Bowl

If you have ever had an egg roll, the flavors and textures of this dish will be very familiar. This is a healthier version that will take a fraction of the time to make, and will be good to enjoy for days.



Ingredients

  • 1 lb ground turkey
  • 1 medium onion, diced
  • 1 cup carrots, shredded
  • 3 cloves garlic, mined
  • 5 cups cabbage, shredded,
  • 1 tsp fresh ginger, minced
  • ¼ cup chicken stock
  • 2 tbsp coconut aminos or soy sauce
  • 1 tbsp sesame oil
  • 1 tsp rice wine vinegar
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  1. In a large saute pan over medium heat, cook the ground turkey until almost fully cooked through. Push it to the side of the pan.
  2. Add onion and saute for 3-4 minutes.
  3. Add shredded carrots, garlic, and ginger and saute for 2 minutes. Stir the vegetables and turkey together.
  4. Pour the chicken broth in the pan and scrape the bottom of it to deglaze it.
  5. Add cabbage, coconut aminos, vinegar, salt, and pepper. Stir well and cover with a lid. Reduce heat to medium-low and cook for 12-15 minutes, or until cabbage is to your desired tenderness.
  6. Just before serving add sesame oil.
  7. Serve over regular rice, cauliflower rice, cauliflower puree or eat it in a bowl by itself.
