Taco Salad

Taco Tuesday is one of those nostalgic meals and sometimes we just need a lighter version. This taco salad will leave you satisfied, feeling good, and happy that you have fulfilled your taco cravings!



Ingredients

  • For the taco meat:
    • 3 lbs ground turkey
    • ½ onion, diced
    • 1 tbsp chili powder
    • 1 tsp paprika
    • 2 tsp cumin
    • 1 tsp oregano 
    • 1 tsp salt
    • ½ tsp pepper
    • ¼ tsp red pepper flakes
    • ¼ cup water
  • For the salad:
    • 2 heads romaine lettuce, cleaned and chopped
    • 2 avocados, sliced
    • 1 tomato, diced
    • 1 red or orange bell pepper, chopped
    • ½ jalapeno, minced
    • ¼ cup cilantro, diced
    • ½ red onion, minced
    • 1 cup salsa 
    • 1 12 oz bag cauliflower rice, cooked
    • 1 15 oz can black beans, rinsed

Instructions

  1. In a large cooking pan, add the ground turkey and onion. Stir often and cook on medium until the meat is cooked through. About 6 minutes.
  2. Add in all of the spices and ¼ cup of water to the pan with the ground turkey. Mix well until everything is combined and cook for 1-2 minutes.
  3. In a large mixing bowl, add the lettuce, tomato, bell pepper, jalapeno, black beans, cilantro, cauliflower rice, and onion. Mix well until everything is combined.
  4. Top the salad with salsa and avocado. Mix well until everything is lightly dressed.
  5. Serve and enjoy!
