Cinnamon Raisin Pecan Bread

Breakfast breads or quick breads are an easy crowd pleaser. The cinnamon raisin pecan bread is basically an oatmeal cookie now in bread form. It is lightly sweet and full of texture.
Ingredients
- 2 ¼ cups oat flour, finely ground
- ¾ cup almond flour, blanched and finely ground
- 1 tsp baking soda
- ½ tsp baking powder
- 3 tsp cinnamon
- ½ tsp salt
- ½ cup pecans, chopped
- ¾ cup raisins
- ½ cup almond milk, or favorite milk
- ¾ cup water
- 3 tbsp coconut oil, melted
- ¼ cup maple syrup, can add more for a sweeter bread
- 1 tsp vanilla
Instructions
- Preheat the oven to 350 degrees. Line 9x5 loaf pan with parchment paper.
- In a microwave safe bowl, add water and almond milk. Heat slowly until warm.
- Add melted coconut oil, maple syrup, and vanilla to the warm water and milk mixture.
- In a large mixing bowl, combine all the dry ingredients - oat flour, almond flour, salt, cinnamon, baking powder, baking soda, pecans, and raisins. Mix until combined.
- Add the wet ingredients into the dry ingredients and mix until well combined.
- Pour the dough into the loaf pan, and top with a few pecans and raisins.
- Bake for 45-50 minutes or until a toothpick comes out clean. Let cool before slicing and serving.
