Pumpkin Spice Sweet Potato Oat Waffles

Waffles are a fun way to twist up your go to breakfast. To make them even better, these sweet potato waffles have all the comforting spices, are vegan, gluten free and have a lot of nutritional value. Not to mention, they are incredibly delicious.
Ingredients
- 1 cup sweet potato, baked and skin removed
- ¾ cup almond milk, or favorite milk
- ½ tbsp apple cider vinegar
- 1 tsp vanilla
- 1 tbsp almond butter, or favorite nut butter
- 2 cups rolled oats or oat flour, GF if preferred
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tbsp cinnamon
- 1 tsp pumpkin pie spice
- ¼ tsp salt
- Optional: 1-2 tbsp maple syrup or honey, if you want a sweeter waffle
- Optional: ¼ cup chopped pecans or walnuts
Instructions
- In a small bowl, combine the almond milk and apple cider vinegar. Mix well and set aside for 3-4 minutes.
- In a high speed blender, add all of the ingredients besides the pecans if you are adding them in.
- Blend the sweet potato, milk mixture, almond butter, vanilla, cinnamon, pumpkin pie spice, salt, baking soda, baking powder, and oats until smooth.
- In a heated waffle iron, spoon ⅓ cup of the waffle batter and cook according to your waffle iron instructions.
- Serve immediately. Top with banana or berries, extra almond butter, and more pecans. Or any of your favorite toppings. Serve hot!
