Honey Mustard Pistachio Salmon

A quick, healthy, and easy meal that is full of flavor and texture. Pair it with your favorite salad, roasted veggies and you have a meal in 20 minutes or less.



Ingredients

  • 4 6-8oz pieces fresh salmon
  • ¼ cup pistachios, chopped finely (can use a food processor)
  • 2 tbsp dijon mustard
  • 1 tbsp olive oil
  • ½ tbsp lemon juice
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  • 1 tsp salt
  • 2 tbsp honey (can skip to be sugar free)

Instructions

  1. Preheat the oven to 400F.
  2. Line a cooking sheet with parchment paper or tin foil. Place the pieces of salmon on the cooking sheet.
  3. In a small bowl, add the dijon mustard, lemon juice, 1/2 tbsp olive oil, honey, salt, pepper, and garlic powder. Stir well.
  4. In a food processor, pulse and chop the pistachios into fine pieces. Add in 1/2 tbsp of olive oil and stir until combined.
  5. Spread ¼ of the mustard mix on each piece of salmon. Top with about 1 tbsp of chopped pistachio mix. 
  6. Bake for 8-10 minutes until the salmon is cooked to your liking. 
  7. Serve immediately with your favorite sides!
