Vegan Kale Pesto

Pesto is one of those sauces that is nice to always have on hand for a quick pasta dish or on top of your favorite protein. This version is cheese free, but you won’t even miss it.
Ingredients
- 2 cups kale
- ½ cup olive oil
- ½ cup walnuts
- 2 garlic cloves
- 2 tbs lemon juice
- Salt & pepper
- ¼ cup nutritional yeast
Instructions
- In a food processor blender, add the kale, walnuts, garlic, lemon juice, salt, and pepper. Pulse until everything is chopped very small and coming together.
- Add in the nutritional yeast.
- Turn the blender on low and slowly add in the olive oil while the blender is on.
- Continue to blend until you achieve a creamy texture.
- Use the pesto right away or store in a sealed container in the refrigerator or freezer.
